Firecracker Stuffed Dates

1 lb. Mexican chorizo sausage
20 large pitted dates, Medjool if possible
10 strips of thick cut bacon, cut in half
1 8oz chipotle peppers in adobo sauce
28 oz can of diced tomatoes

Preheat oven to 350-400*. Remove any casing from sausage. Brown. Pour off excess grease and let cool. Slit one side of each date. Stuff with cooked sausage. Wrap with a slice of bacon and secure with toothpick. Place wrapped dates on baking sheet with sides or in baking dish. Place in oven. Bake 12-15 minutes or until bacon begins to brown. Turn and bake an additional 10-12 minutes. You may also brown in a fry pan if desired.
While dates are browning, remove 1-2 chipotle peppers from adobo sauce. Any additional peppers maybe used in another recipe or discarded. Save adobo sauce. Slice peppers open, remove ALL seeds, then dice. Be careful of eyes, etc as these peppers are HOT! Combine tomatoes, adobo sauce and peppers. Pour over stuffed dates and continue baking 10-12 minutes or until sauce is heated through.
